Highlights•Traditional starch pasting parameters are inconclusive for data interpretation.•Starch pasting curve obtained from RVA was divided into 4 parts and modeled.•A novel model was proposed for starch gelatinization part.•Novel parameters will help to interpret and compare the results of future studies.
